Brown Bread for Beginners - Easy  Quick - Fun

Mixing

In a mixing bowl, whisk until frothy:
2 large size eggs
2 tablespoons oil
1 cup lukewarm water (room temperature or 70°F)
Add all at once:
2 cups (340g) of Astoria Mills Brown Bread Mix #6
Mix well with a spoon until blended

Rising

Cover and let dough rise at room temperature for 2 hours
(Or put dough in the refrigerater and let it rise there overnight)

Working with the Dough 

Sprinkle a smooth surface with Astoria Mills Fine Flour - Mix #3. Scrape the dough out of the mixing bowl onto the lightly dusted surface and sprinkle some more flour on top of the dough. (Not too much flour at this stage, just enough to handle it so your hands don’t stick), Shape the dough into a ball. If the dough is still sticky, sprinkle it again with a little more flour.

This should only take about 30 seconds to a minute. Working with gluten free dough

Shape ball into an artisan loaf and score the top as desired - like the photo.
Brush top with oil
Let rise again for 30 to 60 minutes

Baking & Cooling

Preheat oven to 350°F
Bake approximately 30 to 45 minutes depending on size.
Baked bread taps hollow when done
Let cool to room temperature before slicing

Refrigerate unbaked dough for up to 3 days to use as needed. Longer fermentation adds flavor. Shaped dough can also be frozen after second rise. To bake, place frozen in cold oven, turn oven on and bake until done.

Mom's Grilled Cheese Sandwiches - just gluten free of course!

Slice Bread made with Astoria Mills Brown Bread -  Mix #6 and put a layer of your favorite cheese in the middle. Butter outside of bread on one side and place buttered side down in frying pan. Butter top side. Let brown, flip over brown the other side until cheese is melted. Serve.

Stuffed Brown Bread Roll

Make ½ recipe for bread above. - (makes 1 large loaf)

After first rise, knead dough made with Mix #6 with Astoria Mills Fine Flour Mix #3, roll out into a flat rectangle about ¾ inch thick, on top of a sheet of parchment paper. Brush surface of dough with a little water to help bind.

Place 2 whole cooked chicken breasts ⅓ of the way in towards the middle of the rectangle along one side. Place slices of avocado on top. Mix gf mayonnaise with a couple of drops of hot sauce and a teaspoon of mustard, spread liberally on top of avocado. Place a few spinach leaves on top, & some grated cheese.

With both hands start turning dough over fillings and keep turning over until fillings are completely wrapped inside dough. Pinch to seal ends and turn ends under.

Place onto baking tray with parchment paper and brush outside of filled loaf with oil or an egg wash. Bake at 350F for 45 to 60 minutes until bread is fully cooked. Place foil on top to avoid crust becoming too brown. Cool before slicing, chill, store in refrigerator. Also works great with leftover turkey breast and homemade whole cranberry sauce or any fillings you like. Easy to make ahead for a picnic or take along lunch.

Other bread ideas: Add raisins, seeds, nuts or citrus peels and spices for a variety of loaves. Add caraway seeds for Old World Bread flavor.
