Easy Quick - Fun Recipes
Rich Moist Chocolate Cake or Muffins
Mix dry ingredients in a separate bowl, set aside:
2 cups AM Pastry Flour Mix #2,
2 tblsp. baking powder,
½ cup cocoa,
½ cup gf chocolate chips,
1 tblsp. psyllium (optional)
Wet Ingredients: Beat together in a bowl:
4 eggs, ¾ cup oil, 1 cup sugar (or subst.),
1 teasp. pure vanilla, ½ cup applesauce or 1 small ripe banana,
1 cup water, to make a (not too thick) cake batter consistency.
Blend all together. Pour into greased 9x12 cake pan. Bake in pre-heated 350F oven for about 35 to 45 minutes or until tester comes out clean.
Melt ½ cup butter. Place in mixer bowl, blend in ¼ cup cocoa, 1½ cups icing sugar, 1 tsp. pure vanilla, 1 to 2 tablespoons milk, beat 1 minute.
Chocolate Cupcakes with Mocha Frosting
Makes approx. 16 cupcakes (full size muffin cup size)
Cupcake recipe makes a nice light cake, tasters could not tell it was gluten free! And because the mix is enriched, you are not eating empty calories.
1.Beat wet ingredients together in bowl.
¾ cup oil
¾ cup sugar
1 teaspoon vanilla
1 ½ cup milk
2 tblsp. White vinegar
2. In a separate bowl, blend together well
1 tablespoon psyllium husk powder (this is important, you can get this in bulk at the Bulk Barn) .50
2 cups Astoria Mills Pastry Flour - Mix #2 (1/3 pkg.)
2 tablespoons baking powder
¼ Teaspoon Baking soda
¾ cup cocoa
Fold/stir Dry ingredients in to wet ingredients all at once and quickly beat together until you have a smooth pourable batter.
Pour batter into cupcake liners in muffin tin. Bake at 350F for about 25 minutes or until tester comes out clean. Cool and frost with Mocha Frosting.
Whip soft butter and icing sugar together to make a frosting. Add 1 teaspoon strong coffee. Pipe onto cupcakes. Approximate cost to make with frosting is under $.79 Pound for pound, Astoria Mills enriched mixes are the best value!
½ cup shortening,
½ cup butter or margarine,
1 tblsp. vinegar,
1 tblsp. brown sugar,
5 drops Pure Vanilla,
2 tblsp. cold water,
¼ scant teasp. xanthan gum,
2 cups Astoria Mills Pastry Flour -Mix # 2.
Pat into pie plates & chill in freezer. Fill pie crusts and bake or pre-bake at 350 F. (may be frozen ahead)
Makes 2 bottom crusts or 1 double layer. To make top layer, roll between 2 sheets of waxed paper
Chill in freezer for 15 to 30 minutes or more while preparing filling and then place on top of filled pie. Bake.
Makes great tart shells, be sure to use very little Xanthan gum and the tarts will hold up in your hands.
Chocolate Chip Cookies ...like the best you've ever had!
Cream together in electric mixer:
1 cup butter,
¾ cup sugar,
¾ cup brown sugar,
1 tsp. pure vanilla,
3 eggs, pinch of salt.
Mix the following dry ingredients together then beat into creamed mixture:
2½ cups AM Pastry Flour Mix #2,
½ scant tsp. Xanthan Gum,
1 scant teasp. baking powder.
Mix in 2 cups gf chocolate chips by hand.
Spoon onto parchment paper lined cookie sheet, bake at 350F for 15 min. or until golden.
Really Good Southern Biscuits
Place in Bowl:
2 cups Astoria Mills Pastry Flour Mix #2,
2 level tblsp. Xanthan Gum,
1 tblsp. Baking Powder.
Blend & mix until crumbly with:
¼ cup butter or shortening.
Whisk until frothy in separate bowl:
1 cup buttermilk (or milk with 1 tblsp.vinegar or almond/soy milk 1 tblsp.vinegar).
Lightly work into pliable dough. Dust counter with Astoria Mills Pastry Flour Mix #2, roll to 1 inch thick and cut out biscuits. Dip cutter in Mix #2 between each cut to avoid sticking. Bake at 375F until done. Makes 9 to 12 biscuits. Add raisins to dry ingredients for scones.
