Astoria Mills Mixes - enjoy all the foods you love again
Basic Full of Fiber Muffins - Makes approx. 1 Dozen Muffins
Mix dry ingredients in a separate bowl:
2 cups AM All Purpose Flour Mix #1
1½ tblsp. baking powder,
¼ cup ground blond flax seed,
2 tblsp. psyllium (optional),
1 cup whole fruit, such as blueberries or cranberries or chocolate chips.
Wet Ingredients- Beat together:
4 eggs,
¾ cup oil,
½ cup sugar (or subst.),
1 tsp. pure vanilla -1 tsp. cinnamon,
1 cup pureed fruit or vegetable,
ie: applesauce, banana, pumpkin, grated carrot.
½ to 1 cup juice, water, or milk to make a (not too thick) muffin batter consistency.
Blend dry and wet ingredients together and fill paper muffin cups or greased muffin tin.
Bake in pre-heated 350F oven for about 35 to 40 minutes or until tester comes out clean.
Blueberry Muffins
Mix dry ingredients in a separate bowl:
2 cups AM All Purpose Flour - Mix #1
1½ tblsp. baking powder,
1 cup fresh or frozen blueberries.
Wet Ingredients- Beat together:
4 eggs,
¾ cup oil,
½ cup sugar (or subst.),
1 tsp. pure vanilla -1 tsp. cinnamon,
2 cups milk or almond milk to make a (not too thick) muffin batter consistency.
Blend dry and wet ingredients together and fill paper muffin cups or greased muffin tin.
Bake in pre-heated 350F oven for about 35 to 40 minutes or until tester comes out clean.
Easy Pancakes
Whisk ingredients together to make a pourable batter.
3 eggs, 4 tblsp. oil, 1 to 1½ cups milk or almond milk or subst., dash salt, 1 tblsp. baking powder,
1 cup AM All Purpose Flour Mix #1 -
Cook pancakes on both sides, serve with syrup.
Add blueberries while cooking or serve with strawberries as pictured.
Great, soft fluffy pancakes.
Add ½ cup AM Aztec Harvest Blend #4 for more whole grain goodness.
(tip: Sometimes I use yogurt or almond milk, this is a recipe you can have fun playing with as well as eating!)
Peach Cobbler
Use plain Full of Fiber Muffins batter above without added fruit. Thin batter slightly with water. Pour into a greased casserole dish.
Slice peaches on top and drizzle with a tablespoon of brandy and then top with Crumble Topping and bake about 35 minutes.
Serve with whipped cream.
Crumble Topping
¾ cup All Purpose Mix #1, ½ cup sugar, ½ cup butter or margarine.
Crumble together and sprinkle on top of unbaked pie or dessert. Bake until golden brown.
(AM Pastry Flour Mix #2, makes great pie crust)

Mix dry ingredients together in bowl:
2 cups Astoria Mills All Purpose Flour Mix#1, 1½ cups sugar(or subst.),
1 Tsp.Baking Powder, 1 Tsp.baking soda, ½ tsp.salt, 2 tsp.cinnamon,
1 cup raisins, ½ cup walnuts, ½ cup maraschino cherries halved, ½ cup grated coconut, 4 cups grated carrots.
Whisk together until fluffy in separate bowl:
4 eggs,1 teasp.pure vanilla,1 cup oil. Blend all together.
Pour into 8 ” greased round springform pan. Bake at 350F for 45 to 60 min.
Cream Cheese Frosting:
1½ cups cream cheese, 2 cups icing sugar, Zest of 1 orange,1 teaspoon orange juice.
Whip and spread on cooled cake. Decorate with candied orange peel.
Granddads Southern Milk Gravy for Biscuits
¼ cup bacon drippings or vegetable oil ¼ cup Astoria Mills All Purpose Flour Mix #1
heat gently in skillet stirring constantly.
Add 2 cups cold milk or cream or water. Salt & pepper to taste.
For beef gravy add beef stock. Cheese Sauce: add grated cheese, 1 teasp. mustard and a drop hot sauce.
